Red-Green Skillet Makes a Quick Holiday Meal , Melissa Morelli Lacroix
This tasty dish is a snappy supper solution that combines flavour and colour. It can easily be doubled to create two meals out of one.

The holiday season is often harried and busy, full of parties, school concerts and recitals, shopping and the usual day to day business at work and home. This Red-Green Skillet recipe will relieve some of that pressure. It is a quick and easy meal solution and is chockful of vitamins to help keep every one healthy for the holidays..

Red-Green Skillet Recipe

Ingredients:

  • 1 pound sausage (Smokies or Chorizos are the best for flavour, Deer sausage adds variety)
  • 1 c chopped red onion
  • 4 c fresh spinach, lightly packed
  • 3 c halved cherry tomatoes or chopped large tomatoes (canned can be used if well drained)
  • 1 c fresh or thawed peas
  • 1 ½ c dried basil
  • ½ c crumbled feta cheese or small cubes of mozzarella or drained cottage cheese
  • fresh ground pepper according to taste

Instructions:

  1. Slice the sausage into ½ inch rounds. Place in frying pan and cook on medium heat for about 10 minutes or until brown. Remove from skillet, but retain grease.
  2. In the sausage grease, brown the onions.
  3. Add the spinach, peas, tomatoes, and basil. Cook until spinach is slightly wilted, about 2 minutes.
  4. Add the sausage, cheese and pepper. Cook for another 2 minutes or until heated throughout and the cheese is nearly melted.

Red-Green Skillet Serving Options:

  • Serve over fettuccine prepared with olive oil and minced garlic. Sprinkle with parmesan for extra cheese.
  • Serve with prepared rice or tabouleh.
  • Serve alongside roasted baby potatoes.

To prepare two meals at once, double the Red-Green Skillet recipe and use half of it to make two Mexican Meat Pies. These pies can be served as a second dish with the Red-Green Skillet or saved for a later holiday dinner. The Red-Green Meat Pie also makes a tasty and easy lunch for work or school.

Red-Green Meat Pie

Ingredients:

  • 1 1/2 c flour
  • 1 tsp. salt
  • 4 eggs, beaten
  • 2/3 cup milk
  • 2 Tbsp cornmeal
  • 16 oz. mozzarella (grated)

Directions:

  1. Mix the ingredients together in a medium sized mixing bowl. Pour into two greased 9” pie plates or square pans or one 9” x 13” pan.
  2. Spread the Red-Green Skillet mixture on top.
  3. Bake in a 400 F oven for 25-30 minutes.
  4. Let cool 5 minutes before serving or let cool completely before wrapping and storing. Stores well removed from the pan.
