Perfect for the day after Thanksgiving or Christmas Dinner, this leftover turkey soup recipe is rich, hearty and filled with organic herbs and spices.

This mostly organic gourmet soup recipe is great way to use holiday leftovers for a meal more substantial than a turkey sandwich. It is delicious any time of year; you will want to always cook French Green Lentil Soup the day after roasting a free-range turkey or organic chicken.

French Green Lentil Soup With Turkey Leftovers- Organic Recipe

Gourmet Soup Ingredients

Organic Meat and Broth

  • 2 cups Organic, free range turkey broth reserved from Christmas Dinner
  • 4 cups Water
  • 16 oz Leftover organic turkey chunks from Christmas Dinner

Vegetables and Legumes

  • 1 package Trikona French green lentils
  • 2 Organic white onions, thinly sliced

Organic Herbs and Spices

  • 1 tsp Watkins organic chili powder
  • ½ tsp Watkins organic garlic powder
  • ½ tsp Watkins organic thyme
  • ½ tsp Watkins organic ground cumin
  • ½ tsp Watkins celery seed
  • ½ tsp Watkins organic black pepper
  • Salt to taste

Garnish

  • 3 Tb Horizon Organic butter solids
  • 3-4 sprigs fresh organic cilantro to garnish

Methodology

  1. Slice white onions and pick leaves from cilantro sprigs.
  2. Combine leftover free-range turkey broth, organic meat, and water in large stockpot over medium-high heat.
  3. Add white onions.
  4. Add Watkins spices and herbs (chili powder, garlic powder, thyme, ground cumin, celery seed, black pepper).
  5. Heat to a boil.
  6. Add Trikona French green lentils and cook until soft but intact (about 20 minutes).
  7. Remove from heat.
  8. Stir in Horizon Organic butter solids and cilantro leaves.

Substitutions and Tips

  • Consider rubbing the Christmas Dinner turkey with Watkins Spices chili and garlic powders to infuse the organic meat and broth with additional flavor.
  • If reserved organic turkey broth totals more than two cups, substitute for water.
  • Reserve butter solids if making “Walnut Currant Baklava” and use in French Lentil Soup with Leftover Turkey.
  • Make this soup with leftover organic chicken or Christmas ham.
  • Add sliced carrots if desired.
  • Substitute 3 Tablespoons Horizon Organic salted butter for butter solids.

Serving Suggestions for French Green Lentil Soup With Turkey Leftovers

Serve with oven roasted yams, red potatoes, and turnips in olive oil and butter with a large loaf of warm, artisan sourdough garlic bread. Food and Wine's website recommends pairing French Green Lentil soup with a robust, earthy red such as the 2001 Terrazas or the 2001 Valentín Bianchi. If unavailable, select another Argentina Malbec. Glenora Wine Cellars suggests pairing with a Carbernet Franc.

Finish with a serving of fresh “Walnut Currant Baklava.”
