Recipes: Mustard Sauce and 2 Variations of Tortilla Roll-ups

Tortilla pinwheels, one with ham and cream cheese, one with salsa and cream cheese, are easy to make- and-take when someone else is hosting the party on Super Bowl Sunday

Soft flour tortillas provide the base for these two tasty versions of tortilla roll-ups. Both recipes call for 6-inch tortillas for the correct recipe yield, but larger tortillas will yield larger appetizers and require less rolling and more slicing.

Tortilla Roll-ups With Shaved Ham and Cream Cheese

  • 2 8-ounce packages cream cheese, softened
  • 1 pound shaved ham
  • 2 4-ounce cans diced green chiles, drained
  • 1 can pitted black olives, drained and chopped (can size will depend on whether olives are whole or already chopped--any leftovers can be frozen for later use)
  • 24 6-inch flour tortillas

Directions:

  1. In a large bowl beat cream cheese with electric mixer until smooth.
  2. With a spoon, stir in ham, chiles and olives until well-blended.
  3. Soften tortillas in microwave until pliable but not tough or hot (less than 10 seconds on high).
  4. Spread 1 heaping tablespoon of cheese mixture on tortilla, covering surface to the edges.
  5. Roll up tightly, jellyroll style, and place seam side down on baking sheet or platter.
  6. Cover sheet tightly with plastic wrap and chill at least 2 hours. Tortilla rolls may also be wrapped individually to chill.
  7. Slice each roll into 4 pieces.
  8. Makes 8 dozen roll-ups. Serve with Mustard Sauce (below) or salsa.

Mustard Sauce

  • 1 cup malt vinegar
  • 1/4 cup dry mustard
  • 3 egg yolks
  • 1 cup sugar

Beat egg yolks. Stir in vinegar, mustard and sugar. Cook in the top of a double boiler, stirring, until thick.

Tortilla Roll-ups with Cream Cheese and Salsa

  • 1 8-ounce package cream cheese, softened
  • 1/3 cup chunky salsa
  • 1/4 cup chopped green onions (tops included)
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon chili powder
  • 12 6-inch flour tortillas

Directions:

  1. In a small bowl, beat cream cheese with electric mixer until smooth. Add salsa, onion, garlic salt and chili powder and blend well.
  2. Soften tortillas by microwaving for 10 seconds or less. Tortillas should be pliable but not hot. If left in microwave for too long they will be tough and may stick together if microwaved in a stack.
  3. Spread a heaping tablespoon of cheese mixture on each tortilla. Tightly roll up tortilla, jellyroll style, and place seam side down on baking sheet or platter.
  4. Cover sheet tightly with plastic wrap and chill at least 2 hours, or wrap each tortilla roll individually to chill.
  5. Slice each roll into 4 pieces.
  6. Each piece can be garnished with a dollop of sour cream, guacamole, or salsa. Makes 4 dozen roll-ups.
